I consider them basically equal prey, as do wolves and bears and mountain lions. Allowing for exceptionally pathetic "hobby" cattle, dairy cattle and zebu, and disregarding them. A substantial serious bull, a bull bison and a bull cape buffalo are actually, IMO, all fairly equal in regards to the challenge they pose for wild carnivoran predators.

I think cape buffalo and cattle both might be a little better at killing predators than bison, I consider them all basically equally difficult to kill... although if anything the cape buffalo may be more durable. The bison I may support in a fight between the 3 bovines.
All in all I think the differences through the eyes of a predator shouldn't be overestimated.

I think jag has zero, zilch, nada chance against any cape buffalo while I think they could take take cow bison or maybe a bull rarely for a large male jaguar in a really good ambush. I think it would be totally fucked with scrub bull too. I view them as equal to cape buffalo. But yeah all would be somewhat similar.

Where would you guys rank Gaur on that scale? They are a very dumb in particular animal and their ability to kick ass is kind of lacking. They have poor eyesight too, or are just horribly dumb. Tigers take them, but due to their size and the fact that they can sometimes kick ass with their horns they manage to survive tiger attacks but never pose a danger to tigers. If a tiger pushed its luck with a gaur there is not much a gaur can do to stop it. Tigers take more impressive prey than gaurs, though the gaur predation is still impressive. I believe a jaguar could kill a gaur but would never stick around to find out.
