Check out Way of the Hunter much less arcade-y and realistic (if that's what you're going for). I like watching this guy called Accurize2 play it, seems to know what he's doing. Anyway there's none of this goofy little notification box thingy telling you levels and stuff. It's just completely hands on with no HUD. Unfortunately no dogs AFAIK. But the only other down-side it has is this really boring and cringe story line (I don't even know why a hunting game of all things would need a story line) but otherwise it's a really cool game. Also hunts are a fair bit harder without all the HUDs telling you exactly where the fauna is, you'll have to track the AI and you also might need to keep a note of where things spawn (drinking spots and stuff). Really just a more nuanced and interesting take on the Hunting simulator genre.

For me hunter: Call of the wild already makes it kind of needlessly difficult. I mean I know real hunting is harder, but it makes it hard in some tedious ways which aren't that fun.
My favourite hunting game was actually Cabela's Dangerous hunts 2009-
It somehow captured the peaceful soothing relaxing vibe of being in nature and was fully intuitive. Like you could just zone out and run on instincts losing track of time and it was nice. I'm sure it is dated and doesn't hold up now, but they could definitely improve hunting games and part of that would be stripping a lot of junk out and simplifying to be a bit more like dangerous hunts 2009.
I got a different Cabela game after that which sucked the fun out by having these mandatory finnicky duck calling challenges, I can't even remember what it was, I dumped it because it sucked.
I'll check out way of the hunter, might be more my speed.
