For fun, lets try to give different domestic Dog breeds the stats TierZoo uses in his videos, for reference these are the stats he gave several wild Canines. Far from perfect but it's ok for reference
Maned Wolf
Intelligence: 65 Power: 45 Defense: 45 Movility: 85 HP: 40 Stealth: 60
Coyote
Intelligence: 70 Power: 45 Defense: 25 Movility: 75 HP: 30 Stealth: 35
Red Fox
Intelligence: 75 Power: 40 Defense: 30 Movility: 70 HP: 30 Stealth: 35
Wolf
Intelligence: 80 Power: 80 Defense: 30 Movility: 65 HP: 25 Stealth: 50
African Wild Dog
Intelligence: 80 Power: 85 Defense: 25 Movility: 75 HP: 25 Stealth: 65
What scores would you guys give to:
- Bulldog-type Dogs - Boarhound-type Dogs - Greyhound-type Dogs - LGD dogs

I would personally give the coyote a higher intelligence stat

The categories are a little dumb, what is defense? Is durability defense or HP? What about dogs who use offense as their only defense (and btw, it is the most effective defense)? Stealth is also just unnecessary. Then there's kind of no damage output stat, no stamina stat, no actual fighting/grappling ability stat.
But fine (adding bull terrier because it is a little different and not sure which you mean).
Bulldog Intelligence: 60 Power: 95 Defense: 0? possibly 99. Mobility: 60 HP: 95 Stealth: 45
Bull terrier Intelligence: 70 Power: 90 Defense: 0? possibly 99. Mobility: 80 HP: 88 Stealth: 40
Boarhound Intelligence: 70 Power: 93 Defense: 0? possibly 98. Mobility: 85 HP: 90 Stealth: 60
Hunting greyhound Intelligence: 65 Power: 75 Defense: 0? possibly 75 Mobility: 95 HP: 55 Stealth: 60
LGD Intelligence: 80 Power: 97 Defense: 99 Mobility: 30 HP: 97 Stealth: 0
This is entirely insufficient. Anyone would think I'm an LGD fan but I am definitely not.
Also agree with Lincoln. Coyote is probably the smartest of all those. Then wolf and fox maybe tied.
Power ratings are based on wolf being 80, which is way too high, but if it is 80 then these dogs are where I put them.

Having thick skin that reduces damage taken, for example would count as defense. Not HP.

Is there a place where he put up the official stats? His own YouTube Channel, the stats aren't 100% accurate but they get you the general idea.

Giving Polar Bear only 40 intelligence is quite mean though.

Having thick skin that reduces damage taken, for example would count as defense. Not HP. That is very interesting and strange. So durability is defense. And HP is ... what? I think animals are basically equal in how much damage they can take before dying. How much damage they can take without giving up differs. APBT would be 99 HP in that case, but how much damage without dying is just universally equal? Or do you mean it takes more, let's say swings of a hatchet, to kill an orca than a preying mantis? See that would actually be durability, like thick skin... I don't think this distinction really makes sense.

Giving Polar Bear only 40 intelligence is quite mean though. More ignorant than mean. One of the smartest carnivores with ape level intelligence according to some research.
