Can a Wolfhound be a drop dog or only an RCD? I think it's big enough for that role.

"Only an RCD" doesn't really make sense. If a dog can be an RCD it can be a drop dog. Now it's possible for drop dogs to be more staunch with lower centre of gravity and wider stance and stronger and more durable etc because they don't need to be "track athletes" as well. BUT the job doesn't necessarily require a mega staunch catch dog. It's just possible for drop dogs to be more close-quarter specialised. Drop dogs are not drop dogs because they are amazing, it's more because they fall short of being RCDs. RCDs still need to catch and subdue boars 1 on 1. People use drop dogs because they got a dog and they like it but it can't really keep up with the RCDs or run down prey. It may not be a better catch dog than the RCDs (sometimes it might be, but sometimes it might even be lesser as a catch dog compared to the RCDs).
A wolfhound could definitely be used as a drop dog, it probably doesn't make that much sense, but maybe... if it was lets say 70 + kgs and kind of suffered with stamina and heat tolerance due to it's size, but you let's say hunted with very small dogs in thick steamy jungle in the top end, small to get through the thick cover and also avoid overheating, but then when they bailed up a 120 kg mega boar struggled to subdue it, you might keep your big wolfhound on the quad bike or whatever and drop it on the bay to subdue the big boars. I feel like I've heard of stuff like that. Dogs with RCD breeding that were used as drop dogs because it just suited that individual dog and the circumstances of the hunter.
