I know that Huntaway’s are a herding dog native to New Zealand. Unlike most herding dogs they use noise like barking and howling to control sheep, and can be commanded to do so, as seen in videos of Huntaways working and a video of a Huntaway being commanded to bark at a crowd. Does anyone have any info on these dogs temperament aside from this?

You pretty much nailed it. They are relatives of kelpies but admixed with hound that made them larger and also made them noisy and they use barking to persuade and move livestock. They are also handy and popular hunting dogs in New Zealand. I'd rather a kelpie because I don't like noisy dogs, but I still respect and appreciate them as legit dogs. Their temperament is just intermediate between kelpie and scenthound.

Their temperament is just intermediate between kelpie and scenthound. There are also different roles in New Zealand for the dogs. The Huntaway drives the sheep forward with its barking and howling, whilst the Heading Dog will fetch the sheep and drive them towards the human.
