I think the jaguar gets overpowered and the O'Halloran Hound learns to stay out of the way of the claws and eventually wins.

I personally don’t think any dog will kill a Jaguar at equal size, in this fight the dog has a chance because it’s larger

I personally don’t think any dog can kill a Jaguar at equal size, in this fight the dog has a chance because it’s larger Fighting Bulldogs don't need a size advantage to beat anything, they are at least capable of beating any animal their size, whether they should be favored to do so more often than not I don't know. The O'Halloran Hound isn't a fighting bulldog, it's a boarhound, and sure boarhounds would lose majority with a jaguar their size, but the 20lb size advantage seems to be enough to give it the winning cards. I'm not 100% sure though. The gap between fighting bulldog and boarhound is sometimes quite minimal, the O'Halloran Hound is a Dane x Mastiff so I don't think it even has recent sighthound blood. Keep in mind the fighting bulldog vs slightly larger jaguar fight in San Francisco was voted a draw after a long, grueling battle despite the bulldog dying.

I dunno. I have big respect for the jaguar much more than most cats, as a combatant/fighter I really only respect Jaguar, Lion and Tiger. The tiger through sheer size and athleticism for it's size, but that's significant. I respect the jaguar a lot. It has 3 things which make me do this- Extreme strength (big problem, huge subjugation capacity). Extreme jaws (can kill very easily straight through the skull or anywhere, doesn't need to secure the perfect bite). And also... it's weirdly calm and confident for a cat. Pumas and leopards are super nervous and scared and to me that's a huge mark against them in a fight. Jaguars are not, Lions and tigers are not. They back themselves. By cat standards, very much, and indeed they give off a "dog" energy that even cat fans often note.
All that said... A serious O'halloran with a weight advantage... honestly it should be too much. Remember that brief fleeting moment where a ridgeback cross of maybe 70 lbs troubled that female jaguar of at least 100 lbs/possibly 120 (she looked small, but jaguars do, so compact and dense) by grabbing the back of her head? If that was a legit O'Halloran twice the size of that dog... It's got no reason to let go and working that bite is gonna be a huge problem for the jaguar. I bet when caporal (the french fighting bulldog) fought that Jaguar and put in a good showing he was combating a weight disadvantage, I can't prove it I know, but I bet he was. If it was a small mexican female it was still most likely 110 lbs with a 5 lbs weight advantage, and honestly, why would it be? Maybe, but I doubt it. Could have easily been 120 or 130 without being remarkable for a jaguar at all.
