Even if they're staged... I don't think it makes quite that much of a difference unless they're really pampered captives. And I would suggest vast majority of them are not. Now, if they took some captive animals and tried to get a specific scene they wanted instead of just recording the real result then yes we're getting fucked in the ass.

Some animals are more susceptible to stress in captivity or can become sick if not housed in proper conditions.
Reptiles for instance become very sluggish if they don't get enough heat. In staged fights there is no way to know if the animals are given the light they need. We have no idea if crocodiles in staged fights for instance are just dumped into a cold pond before they are forced to fight.
A lot of times, staged fights aren't even fights. Sometimes they are just play fights made to look like real ones.
And then there are fights were the people intervene and rig it in favor of the one they want to win.

I think a staged fight could still be of some interest, but what you often get in old movies and documentaries is cuts and camera angle changes and they actually tell a story through editing which never happened even in the staged fight.
Perfect example
All that actually happened here was a boar kicked a tigers ass. Then it seems someone shot a boar. They edited and chopped and changed things around to make it look like the tiger won. It's very obvious and no one in the comments can tell.
