Tough call, not gonna lie. White-tailed deer are prey of the Eurasian Lynx here in Finland, and whitetails are rather comparable to mule deer. Mule deer are on record killing female cougars and I don't think a fallow deer is that much inferior to a mule deer, so going off of that I'd say the fallow deer has a very good chance at killing the lynx. Not really sure how they do against predators, but I do know of a video of a fallow deer knocking down a wolf semi-easily with his antlers while trying to escape the pack, shown below

There are no Eurasian Lynx in Spain. Iberian Lynx average 13kg (slighty less in reality but let's just round it up) While Eurasian Lynx is 21kg. Not really a good comparison to be fair since Eurasian Lynx is much larger.
55kgs seems small for a stag? I want the stag to win but I wonder how a winter-weakened reindeer compares to this stag?
Reindeer/caribou are already rather unimpressive and when weakened and in winter even less. Not at all comparable to a healthy fallow buck. Anyways, in this fight I marginally favour the buck. Fallow deer are fairly decent cervids and their antlers appear strong and durable, they are also wells built and the bucks have very thick necks during the rut which will prove difficult for the lynx to suffocate.
