I used to heavily favor baboons over dogs, but recently dogs have been taking W's.
Vs baboons. First links are serious fights, the others are scraps.
Other monkeys (langurs and macaques mostly)
I still think monkey fangs are more lethal than dog canines. There was a now deleted video of some sort of pitbull attacking a smaller macaque. It eventually killed the monkey but the dog was leaking blood at an alarming rate.
Strangely there is this video of a feral dog tanking a bite from a mother macaque. I would guess the other macaque was a male which would explain why the street dog wasn't not really harmed while the pit bull was.

Another thing about baboons and monkeys is that there is a massive difference between a male and a female. They aren't just bigger, their teeth are on a whole different level. Male. Female. I assume that even at parity, male carnivorans (besides spotted hyenas) are stronger than females on account testosterone, I'd wager the differences is not that huge. Maybe like a 10 to 20 percent difference. A male baboon is probably like a 50 to 100 percent upgrade over a female, even at parity. I think the baboon in the first video was a female. I haven't see a video of a dog kill a similar sized male baboon yet in a 1 v 1. There is a really gnarly video of langur partially scalping a man in seconds. Really gross.

Female baboons are really pathetic and I would only ever take stock in the killing of a male. I am 99% sure that baboon is male just due to size. I've seen dogs kill female baboons, little street dogs. Female baboons genuinely are nothing, very very easy for a good hard dog. This female baboon looks totally different to the baboons I posted - streamable.com/of4q5lThe reason it's so lame is because it was harassed for a while, tore up its hamstrings... recurring theme with dog vs baboon. You need dogs that will pick the baboon apart, since a legit full on fight wouldn't end so well. If you have a dog that does commit to a fight, you need that dog to choke out the baboon ASAP.

Does anyone know how dogs do against apes? I'm sure it isn't a common interaction as apes live in more restricted, hard-to-get-to areas than baboons and other monkeys.
Of course I'm aware of the gorilla that killed a dog after being stabbed by spears but are there any other accounts?
Imo a gorilla seems like the worst possible animal that a dog could go up against. Just seems like utter hell.

Everyone here has been talking about Babboons, but to diversify the discussion, what about Chimpanzees? They are one tier above Babboons on formidability.

Naw chimps are nowhere near as formidable as baboons at parity. There are accounts of baboons causing rivals to bleed to death with a single bite. Meanwhile, chimps will spends months forming alliances to gangbeat a single rival but even when they outnumber him over 8 to 1 that one loner will often survive the initial attack. If one lone baboon was mauled by a gang of his peer, I doubt he would survive for more than a minute. Naturally there also going to be way less attacks because chimpanzees live in the deep jungles/forests so they are less likely to encounter dogs in the first place. Gorillas are also overrated and the recent case of a troop of chimpanzees killing a young gorilla really shows how overhyped they are.

Chimps are more durable than baboons, and also more evil. So a dog will have a much worse time with a chimp. Irrespective of chimp vs baboon.
