Walrus in my opinion. It is not just the blubber it is their thick neck almost the size of their body and tusks. The gaur is faster and has strong horns but it is not an agile animal unlike big cats and bears.

Walrus' blubber would be immune to the Gaur's rams. It's literally a big bag of jello. The gaur will hit it until it dies.

/\ Walruses fight with their tusks but death is rare. These tusks can break ice though. Given this, I doubt the gaur will be able to pierce the walruses vitals before getting stab in the legs and bludgeon to death, depending on the position of both animals.
