I'm thinking an Irish Wolfhound or Galgo Patagonico could kill a dairy cow. But then again they're more like boarhounds, despite Galgo Patagonico translating to ''Patagonian greyhound''. We should probably still include them though. I think a staghound could take out a guanaco on a good day.

Red Deer stag is possible for a deerhound or staghound, and is a step up from guanaco, at least size wise. It could be argued the guanaco is better at fighting off predators possibly. But yeah I think a red deer stag of 200 kgs would be pretty close to the ceiling for a true sighthound, and btw this was always their main traditional prey. I think their ability could readily translate to similar sized antelopes like oryx, sable antelope, hartebeest and wildebeest. A large elk might be a bridge too far. You're right that patagonicos and wolfhounds are really more accurately like boarhounds, and I think could kill elk, and even horse and possibly even cattle on a good day.
